Hello, everyone, and welcome to another episode of TalkCast Discovery, the podcast where we go off

the map and deep into the world.

I am your host, Sarah.

Have you ever visited a place where water isn't just a part of the landscape, but the very pulse of

daily life?

Today, we are traveling to a city in eastern China that is defined by this beautiful element.

It is a city where clear springs bubble up under cobblestone streets and weeping willows drape

gracefully over old stone canals.

We are talking about Jinan, the capital of Shandong province, famously known as the City of Springs.

To help us navigate this watery wonderland, I am absolutely delighted to welcome Daniel to the show.

Daniel is a cultural researcher and travel writer who lived in Jinan for nearly eight years,

studying its unique urban layout and local history.

Welcome to the show, Daniel.

Thank you so much for having me, Sarah.

It is a real pleasure to be here.

Whenever I think about Jinan, I instantly hear the sound of running water.

You know, there is a very famous Chinese saying about Jinan that goes, which translates to, Living

there felt like living in a traditional Chinese ink painting.

The connection between the people and the natural springs is so deep and intimate.

I can't wait to share some of that magic with your listeners today.

Oh, that saying is so poetic.

It paints such a vivid picture right away.

Before we dive into the culture, I have to ask about the science behind this.

Jinan is famous for having 72 named springs and actually hundreds of smaller ones.

How on earth did one city end up with so many natural springs?

What is the geological story here?

It is actually a fascinating geological coincidence.

To the south of Jinan, you have the magnificent Mount Thai, a massive limestone mountain range.

Over millions of years, rainwater and snowmelt have seeped deep into this limestone, dissolving the

rock and creating vast underground rivers.

This water flows downhill, heading north toward the Yellow River.

But right underneath the city of Jinan, the water hits a solid wall of igneous rock, which is

completely impermeable.

Because the water cannot go forward, and the pressure from Mount Thai keeps pushing from behind, the

water has no choice but to burst upward through the cracks in the limestone.

That is why you have these incredible, crystal clear artesian springs bubbling up all over the city.

It is like a giant, natural, underground plumbing system designed by nature itself.

That is incredible.

So the mountains and the river basically work together to create this high -pressure water system

right under the city's feet.

I understand the most famous of these springs is the Bautou Spring.

What was your first reaction when you saw it?

Does it really live up to the hype?

Oh, absolutely.

Bautou Spring is often called the number one spring under heaven.

When you first walk into the park, you hear this low, continuous murmuring sound.

When you reach the pool, you see three massive outlets of water constantly churning and gushing up

from the deep.

It looks like boiling water, but it is actually cool and incredibly pure.

In the winter, because the spring water maintains a constant temperature of about 18 degrees

Celsius, steam rises from the surface of the pool.

Walking there on a cold morning feels like stepping into a fairy tale, with misty vapors floating

over the jade green water and ancient pavilions reflecting on the surface.

Oh wow, that sounds absolutely mesmerizing.

I can almost smell the fresh, misty air.

It makes complete sense that a place with such natural beauty would inspire artists and writers.

Janan has a very rich literary history, doesn't it?

Who are some of the historical figures associated with these waters?

You are spot on, Sarah.

Water has always been the muse of Janan.

The city was the home of Li Qingzhao, who is widely considered the greatest female poet in Chinese history.

She lived during the Song Dynasty.

Her poetry is filled with delicate, watery imagery, rowing boats through lotus flowers, listening to

the rain on banana leaves, and the gentle sorrow of autumn.

There is another famous warrior poet from the same era, named Xin Qiji.

These two literary giants represent the dual nature of Janan's culture, the soft, elegant beauty of

the water and the strong, heroic spirit of the mountains.

Later, during the Qing Dynasty, the famous novelist Leo S.

wrote about Janan in his book, The Travels of Lao Kahn.

He described the unique sight of walking through the city streets and hearing the gurgling of

springs everywhere.

That is beautiful.

You know, it reminds me of an essay we often read in school by the modern writer Lao Xie, titled

Winter in Jinan.

He wrote so lovingly about how the surrounding hills cradle the city like a warm, cozy bed, keeping

the winter mild and the waters green.

It seems Jinan has this unique ability to make people feel safe and relaxed.

Lao Xie absolutely captured the soul of Jinan.

He lived there in the 1930s, and he fell in love with its gentle character.

And that gentleness is still visible today in the local lifestyle.

Unlike the fast -paced, high -stress environments of Beijing or Shanghai, Jinan has always maintained

a slower, more deliberate rhythm.

And that rhythm is entirely dictated by the water.

If you want to see the true heart of Jinan, you have to leave the modern shopping malls and head

into the old city alleys, especially around a place called Kuxueiting Street.

Ah, Kuxueiting Street.

I have seen photos of that area.

It looks like a water town right in the middle of a bustling modern city.

Tell us what it is like to walk down that street.

What do you see and hear?

It is like stepping back in time.

On Kuxueiting Street, you walk along a narrow stone canal.

On one side of the canal are traditional gray brick courtyard houses, and on the other side are

beautiful weeping willows whose branches gently brush the water's surface.

What makes this place so special is that it is not a dead museum.

It is a living neighborhood.

You will see elderly residents sitting on low wooden stools under the shade of the willows, playing

Chinese chess, or just chatting.

Some people might be washing vegetables in the crystal -clear spring water flowing right past their

doorsteps, while others are fetching water in big plastic jugs.

Wait, they wash their vegetables and actually fetch drinking water from the same canals?

Is the water really that clean?

It really is.

The water flows directly from the underground aquifers, so it is naturally filtered and incredibly pure.

One of my favorite local traditions is fetching water at Black Tiger Spring, which is not far from

Kuxueiting Street.

Black Tiger Spring has three stone tiger heads carved into a cliff, and water roars out of their

mouths into a large stone basin.

Every single day, rain or shine, you will see thousands of local citizens lined up with empty water

bottles, thermoses, and even giant five -gallon jugs.

They fill them up with the fresh spring water, carry them home on their bicycles, and use it to brew tea.

That is amazing.

I can't imagine a more organic connection to nature.

Drinking tea brewed with fresh, local spring water must taste incredibly different.

Did you try it?

Oh, many times.

There is a local custom called Da Wan Cha, which means big bowl tea.

You can find little tea stalls set up along the springs.

They brew local jasmine tea using the boiling spring water and serve it in these large, simple

porcelain bowls.

It costs almost nothing, just a few cents.

You sit on a bamboo chair, listen to the cicadas in the trees, watch the water flow, and sip this

hot, aromatic tea.

The water is naturally sweet and incredibly soft, which really brings out the floral fragrance of

the jasmine.

It is the ultimate Janan experience.

It teaches you that happiness doesn't have to be expensive.

It just requires you to slow down and appreciate the present moment.

That sounds so peaceful.

I think in our busy modern lives, we all need a bit of that big bowl tea philosophy.

Now, speaking of taste, we can't talk about Shandong without mentioning Lu cuisine, which is one of

the four great traditional cuisines of China.

How does the spring water influence the local food in Janan?

Lu cuisine is famous for its savory, salty flavors and its incredible soup broths.

In Janan, the chefs are masters of using spring water to create delicate, clear broths, which they

call tiao tang.

One legendary dish you must try is the sweet and sour carp from the Yellow River.

The fish is caught fresh, sliced in a special way so it looks like it is jumping, fried to a golden

crisp, and then drenched in a rich, sweet, and tangy sauce made with local vinegar and spring water.

The contrast between the crispy skin, the tender fish meat, and the rich sauce is spectacular.

There is also another dish called Jujuan Dachang, or Nine Folded Intestants, which is a masterpiece

of complex, sweet, sour, bitter, spicy, and savory flavors.

It really shows the culinary depth of the region.

Mmm, you are making me very hungry, Daniel.

A perfectly crispy, sweet, and sour fish sounds divine.

Now, beyond the springs, Janan also has another major watery landmark, Da Ming Lake.

I hear it has a very famous legend connected to the royal family.

Can you tell us about that?

Ah, yes.

Da Ming Lake is the place where all the city's springs eventually gather.

It is a massive, beautiful lake, covered in lotus leaves and surrounded by weeping willows.

The legend you are referring to is about Emperor Qianlong of the Qing Dynasty.

According to popular folklore, when Qianlong was traveling through Janan, he visited Da Ming Lake

and met a beautiful, highly educated local woman named Xia Yuhu.

They fell in love, but the emperor eventually had to return to Beijing, leaving her behind.

This story became incredibly famous all across Asia because of a wildly popular television drama

called My Fair Princess.

Today, if you visit the lake, you can see the rain -setting pavilion, which is said to be the place

where they met.

It adds a wonderful layer of romance and nostalgia to the lake's natural beauty.

I love how history, folklore, and pop culture all blend together in these places.

It makes exploring them so much more rewarding.

But as a modern city of over 9 million people, Janan must face significant challenges in preserving

these ancient springs and traditional ways of life.

How does the city balance rapid modernization with ecological protection?

That is indeed the biggest challenge Janan faces today.

In the late 20th century, rapid industrialization and heavy water consumption actually caused some

of the springs to stop flowing for several years.

It was a wake -up call for the entire city.

A city of springs without flowing water would lose its very soul.

Fortunately, the government and local communities took drastic action.

They set up strict ecological protection zones around the southern hills where the rainwater

recharges the underground water tables.

They also limited groundwater extraction and carefully planned the city's modern infrastructure,

including the subway system.

Building a subway in Janan was incredibly difficult because they had to make sure the tunnels would

not block or pollute the underground spring channels.

Today, thanks to these efforts, the springs have been flowing continuously for over 20 years.

There is also a major push to apply for UNESCO World Heritage status for Janan's spring cultural landscape.

That is so heartening to hear.

It shows that progress doesn't have to come at the expense of heritage and nature.

It requires creative engineering and a deep respect for history.

Looking back at your eight years in Janan, what is the one memory or feeling that stays with you the most?

It is definitely the quiet summer evenings.

I used to walk down to the moat that surrounds the old city.

The water in the moat is entirely fed by the springs, so it is cool and clear.

The city has built a beautiful public park along the moat.

As the sun sets, the willows sway in the gentle breeze, and the lanterns start to light up.

You see families walking together, children dipping their feet in the cool spring water, and street

musicians playing traditional Chinese instruments.

There is an overwhelming sense of peace and harmony.

Harmony between nature and humanity, and harmony between the past and the present.

That, to me, is the true spirit of Janan.

That is a beautiful note to end on, Daniel.

Thank you so much for taking us on this wonderful journey through the sights, sounds, and flavors of Janan.

You have truly made us feel the cool splash of the spring water and the gentle rustle of the willows.

It was my absolute pleasure, Sarah.

I hope your listeners will get a chance to visit Janan and experience its unique charm for themselves.

Well, dear listeners, we have come to the end of today's journey.
