Hello, and welcome to another episode of TalkCast Discovery, the podcast where we step off the map

and dive deep into the world's most fascinating cultures, histories, and traditions.

I am your host, Caroline.

Today, we are traveling to the far southeastern corner of China, to a place where ancient customs

are not just kept in museums, but are lived every single day.

I am talking about Chaozhou, a beautiful, historic city in Guangdong province.

Known for its exquisite crafts, its legendary cuisine, and a very slow, mindful way of life,

Chaozhou is a treasure trove of cultural heritage.

Joining me today to explore this wonderful city is Alexander, a cultural historian and travel writer

who lived in Chaozhou for five years.

Welcome to the show, Alexander.

Thank you, Caroline.

It is an absolute pleasure to be here.

You know, every time I think of Chaozhou, I immediately hear the gentle sound of the Han River

flowing, the clicking sound of tiny clay teacups, and the rich, sweet aroma of roasted Donkong tea leaves.

It is a city that captures your senses right from the moment you arrive.

I am so excited to share its stories with your listeners today.

Oh, that sounds incredibly inviting.

You mentioned the Han River, and that is actually where I wanted to start.

Chaozhou has such a deep historical connection to water, and specifically to this river.

Can you tell us a bit about the history of Chaozhou and how it got its name? Absolutely.

The history of Chaozhou goes back over 1 ,600 years.

The name Chaozhou literally means the prefecture of the tide, because it lies close to the sea where

the river meets the ocean tides.

Geographically, it was somewhat isolated from central China by high mountains.

This isolation was actually a blessing in disguise.

It allowed the local culture, language, and customs to develop in a very unique way, preserving

ancient Chinese traditions that were lost in other parts of the country.

But you cannot talk about Chaozhou's history without mentioning a famous historical figure named Han Yu.

He was a great poet and government official from the Tang dynasty who was exiled to Chaozhou in the

9th century.

Even though he was only there for about eight months, his impact was massive.

He promoted education, helped improve agriculture, and won the hearts of the local people so deeply

that they named the local river, the Han River, and the nearby mountain, Han Mountain, after him.

It is a beautiful example of how much the local people value culture and education.

That is amazing!

To have a major river and mountain named after you just for eight months of good work is a true

testament to his legacy.

Speaking of the Han River, there is a very famous landmark that crosses it, right?

The Guangji Bridge?

I have seen pictures of it, and it looks absolutely unique.

What is the story behind it?

Ah, the Guangji Bridge, also known as Xiangji Bridge.

It is truly an engineering marvel of ancient China.

It was built during the Song dynasty and is celebrated as one of China's four famous ancient bridges.

But what makes it unique is that it is the world's first open, closed bridge.

The two ends of the bridge are made of solid stone pillars and beautiful traditional pavilions.

But the middle section is a floating bridge made of 18 wooden boats connected together.

In the old days, and still today for demonstrations, these boats would be disconnected and moved

aside during the day to allow large ships to pass through the river.

Then they would be chained back together to let people walk across.

Walking on it feels like taking a step back in time.

You can feel the gentle movement of the river beneath your feet while looking at the ancient city

walls on one side and the green hills on the other.

It is an unforgettable sensory experience.

That sounds incredibly romantic.

Imagine a bridge that breathes with the river, opening and closing to keep the water flowing and the

trade moving.

That is brilliant.

Now, once you cross that bridge and enter the ancient city, you are greeted by narrow streets,

traditional houses, and an incredible display of local arts.

I have heard that Chaozhou is very famous for its handicrafts, especially its wood carving.

Can you tell us about that?

Yes, Chaozhou wood carving is legendary.

It is often called gold lacquered wood carving because the finished carvings are covered in delicate

gold leaf.

I remember visiting a master craftsman's workshop in the old town.

The air smelled of freshly cut camphor wood, and all you could hear was the gentle tap -tap of small chisels.

What makes Chaozhou wood carving so special is its multi -layered three -dimensional technique.

A single piece of wood is carved into multiple layers, sometimes up to five or six layers deep.

You can look through the carving and see tiny, incredibly detailed figures of warriors, birds,

flowers, and crabs inside a hollowed -out space.

They often carve auspicious symbols, like lobsters and crabs in a basket, which represent prosperity

and a good harvest.

These carvings were traditionally used to decorate ancestral halls and temples, but also everyday

furniture in wealthy homes.

The level of patience and skill required is mind -blowing.

It can take a master artist several months or even years to complete just one piece.

It sounds like true meditation through art.

I can almost picture those golden layers shining in the dim light of an old ancestral temple.

And from what I understand, this attention to detail runs through all Chaozhou art forms, including

Chaozhou opera and embroidery.

There is a real sense of pride in doing things with ultimate care and patience.

Would you say that is a core part of the local character?

Oh, absolutely.

The people of Chaozhou are known for being extremely hardworking, detail -oriented, and patient.

They have a local saying, which translates to, craft must be delicate, life must be savored.

And there is no better way to understand this life philosophy than through their most famous

tradition, Gong Fu Tea.

Caroline, have you ever experienced a traditional Chaozhou Gong Fu tea ceremony?

I've heard of it, but I have never experienced it in its birthplace.

I know that Gong Fu means effort or skill, right?

So it is not just about drinking tea.

It is about how you brew it. Exactly.

In Chaozhou, Gong Fu tea is not a luxury or a special ceremony reserved only for holidays.

It is a daily ritual.

You will see a tea set in every single shop, office, and home.

Even the taxi drivers sometimes have portable tea sets.

The word Gong Fu indeed refers to the time, skill, and effort required to brew the perfect cup.

It uses a very small clay teapot, usually from Yi Xing or locally made in Chaozhou, and three tiny

porcelain cups arranged in a circle.

There is a very specific sequence of steps.

First, you warm the teapot and the cups with boiling water.

Then, you fill the pot almost to the top with local Phoenix Dan Cong tea leaves.

You pour boiling water from a height to create bubbles, scrape the bubbles away with the lid, and

then pour the tea into the three cups by moving the teapot quickly in a circle.

This ensures that the color and flavor of the tea are exactly the same in every cup.

This circular pouring motion is poetically called General Guan patrolling the city.

General Guan patrolling the city?

What a dramatic name for pouring tea.

And why are there always exactly three cups, even if there are more people?

Ah, that is a great question.

There is an old saying in Chaozhou, three cups make a tea drinking, while two cups make a quiet

conversation, and one cup is just for thirst.

The three cups represent harmony and sharing.

If there are four or five people, the host will pour the three cups, offer them to the guests first,

and then brew another round for themselves and the remaining guests.

It's all about hospitality, taking turns, and slowing down.

The tea itself, Phoenix Dan Cong, is a type of oolong tea grown on the nearby Phoenix Mountain.

It is famous for its natural floral and fruit aromas.

Some varieties smell like wild orchids, others like honey or almonds, even though absolutely nothing

is added to the tea leaves.

When you take a sep, it is very strong and slightly bitter at first, but then it leaves a sweet,

lingering aftertaste in your throat.

The locals call this sweet return of flavor hui gan.

It is a beautiful metaphor for life.

After going through bitterness and hard work, sweetness will surely follow.

Wow, that is beautiful.

Hui gan.

A sweet return.

I love how a simple cup of tea can carry such a profound philosophy of life.

It really teaches you to appreciate the present moment and find sweetness after the struggles.

Now, all this tea must make you quite hungry, and chaozu is globally famous for its food.

In fact, many food critics say that chaozu cuisine, or chaoshan cuisine, is one of the highest

pinnacles of Chinese culinary art.

What makes the food there so special?

Chaozu cuisine is truly extraordinary, because it focuses entirely on the freshness and natural

flavors of the ingredients.

Unlike some other Chinese cuisines that use heavy spices, garlic, or chili to create bold flavors,

chaozu chefs use very light seasoning.

They want the seafood to taste like the sea, and the vegetables to taste like the garden.

Because of its coastal location, seafood is king.

One of my favorite dishes is what they call cold crab.

A fresh sea crab is steamed and then chilled.

It is served cold with a sweet ginger vinegar dipping sauce.

The meat is incredibly sweet, firm, and creamy.

Another legendary aspect of chaozu food culture is their marinated meats, especially the goose.

They use a special breed of goose called the lionhead goose because of its massive size.

It is slow -cooked in a master brine made of soy sauce, star anise, cinnamon, Sichuan peppercorns,

and dozens of other secret spices.

The meat is tender, juicy, and packed with a complex, savory flavor.

It is absolutely mouth -watering.

Oh my goodness, you are making me so hungry.

The contrast between the light, fresh seafood and the rich, deeply spiced marinated goose sounds incredible.

And of course, we cannot talk about chaozu food without mentioning their famous beef hot pot and

hand -beaten beef meatballs.

I have seen videos of chefs beating beef with heavy iron rods.

Is it really as dramatic as it looks?

It is even more dramatic in real life.

I remember walking down a street in chaozu and hearing this rhythmic metal sound, like a blacksmith

at work.

I followed the noise and saw two young men standing in front of a heavy wooden block, holding two

square iron rods that weigh about three kilograms each.

They were beating a large slab of fresh beef with incredible speed and force.

They do this for up to 40 minutes, until the beef is turned into a smooth, paste -like texture.

Because they beat the meat instead of chopping it, the muscle fibers are kept intact.

This gives the resulting beef balls an incredibly springy, bouncy texture.

There is a running joke in China that a real chaozu beef ball is so bouncy, you can use it as a ping

-pong ball.

When you bite into one, it is so juicy that the savory broth literally bursts in your mouth.

And when you eat beef hot pot in chaozu, the beef is so fresh because the slaughterhouses are very

close to the restaurants.

The meat is delivered several times a day, and the chefs carve it into paper -thin slices based on

different cuts, similar to how Western butchers cut steak.

You dip the beef into a boiling broth for just 10 seconds, and it melts in your mouth.

That sounds absolutely divine.

It is amazing how much physical effort goes into making a single beef ball, just to get that perfect texture.

It really goes back to what you said earlier about the local character, doing things with ultimate

dedication and care.

Now, Alexander, you lived in chaozu for five years.

How did living there change your own perspective on life?

Did you adopt some of these local habits?

It completely transformed me, Caroline.

Before I moved to chaozu, I was always rushing.

I lived in big, fast -paced cities where success was measured by how busy you were.

But in chaozu, I learned the art of slowing down.

I started buying my vegetables from the local morning market, chatting with the vendors, and

learning about the seasons of different ingredients.

I bought a small gung -fu tea set, and every afternoon, instead of reaching for a quick coffee to

keep me working, I would sit down and spend 30 minutes brewing tea.

I invited friends over, and we just sat, talked, and sipped tea from those three tiny cups.

I realized that life is not a race to be won.

It is to be savored, one cup at a time, just like the tea.

It taught me to find beauty in details, and joy in simple everyday rituals.

That is a beautiful lesson.

In our modern, hyper -connected world, we often forget how to just exist and enjoy the present.

Now, as a cultural historian, you must have seen how chaozu is changing.

How does this ancient city balance its rich traditions with the demands of modern development and tourism?

This is a very important question.

Chaozu has become very popular as a travel destination in recent years, especially among young

people who are looking for authentic cultural experiences.

The local government has done a wonderful job of preserving the ancient city wall and the old lanes,

like the famous Paifeng Street, which is lined with dozens of beautiful, historic stone archways.

But what I love most about chaozu is that it has not turned into a sterile, tourist theme park.

It is still a living city.

In those ancient houses behind the main streets, real people still live.

You can walk down a quiet alley in the evening and hear the sound of grandchildren playing,

grandparents singing traditional chaozu opera, and of course, the steam rising from their teapots.

The young generation of chaozu is also very proud of their heritage.

Many young people are opening stylish cafes that serve traditional Phoenix Dan Kong tea, alongside

modern espresso, or using traditional wood carving patterns in modern graphic design.

They are not letting their culture die.

They are making it cool and relevant for the 21st century.

That is so heartening to hear.

A culture is only truly alive when it is practiced and evolved by the younger generation, not just

kept under glass.

Alexander, this has been an absolutely mesmerizing journey into the heart of chaozu.

I feel like I have walked across the floating bridge, smelled the camphor wood of the carving shops,

tasted the melt -in -your -mouth beef, and felt the warm, peaceful spirit of the local people.

Thank you, Caroline.

Chaozu is a place that stays in your heart long after you leave.

I hope our conversation today inspires your listeners to explore this magical city and maybe

introduce a little bit of the chaozu slow -life philosophy into their own busy lives. Indeed.

To wrap up today's wonderful journey, we have a fun question for all our listeners.
